This healthy, flavorful salad comes together so quickly and easily, and it’s guaranteed to be a hit with your entire family!

Ingredients

  • 1 tablespoon olive oil
  • 2 boneless, skinless thin-sliced chicken breasts
  • Kosher salt and freshly ground black pepper, to taste
  • 6 cups chopped romaine lettuce
  • 1 Roma tomato, diced
  • 3/4 cup canned corn kernels, drained
  • 3/4 cup canned black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Ranch dressing
  • 1/4 cup BBQ sauce
  • 1/4 cup tortilla strips

Instructions

  • Heat olive oil in a medium skillet over medium high heat.
  • Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces.
  • To assemble the salad, place romaine lettuce in a large bowl; top with tomato, corn, beans, onion and cheeses. Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine.
  • Serve immediately,topped with tortilla strips.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 (15-ounce) can tomato sauce
  • 2 cups salsa, homemade or store-bought
  • 2 cups cooked elbows pasta
  • 1 Roma tomato, diced
  • 1 cup corn kernels
  • 1 cup canned black beans, rinsed
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, halved, seeded, peeled and diced
  • 2 tablespoons chopped fresh cilantro leaves

Instructions

  • Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
  • Stir in tomato sauce and salsa until well combined. Add pasta, tomato, corn and black beans, and gently toss to combine.
  • Stir in cheese until melted through, about 1-2 minutes.
  • Serve immediately, topped with avocado and cilantro.

I love sausage. I love a good brunch. And I love my friends. And I really love a reunion with friends who I don’t see more than a few times each year. And ultimately, if that reunion could include a brunch that includes sausage? Power combo.
Serves: 8

Ingredients

  • 1 cup cooked wild rice
  • 1 can cream of mushroom/chicken soup
  • 1½ cups cooked breakfast sausage or bacon, drained
  • 1 diced onion
  • 1½ cups shredded mozzarella (or other) cheese
  • 7 beaten eggs
  • 2-3 handfuls of spinach
  • ½ cup chopped roasted red pepper (I used the jarred kind)
  • salt and pepper

Instructions

  1. Mix all ingredients and bake at 375 for about 40 minutes. Let stand for about 10 minutes before serving.

Panko-and-tortilla-chip-crusted chicken, sitting atop a few spoonfuls of salsa verde, topped with white cheese, creamy cilantro sauce, and pico de gallo.

Ingredients

  • 2 skinless, boneless chicken breasts
  • 1 egg white, beaten
  • ½ cup tortilla chips, crushed
  • ½ cup panko bread crumbs
  • ½ cup salsa verde
  • ¼ cup pico de gallo (chopped fresh tomatoes and onions)
  • 1-2 slices or 4 tbs. white cheese (ideally Mexican cheese, but provolone worked fine for me!)
  • cilantro sauce: cilantro, oil, avocado, salsa verde

Instructions

  1. Sprinkle the chicken with salt and pepper. Coat the chicken with the egg white. Combine the panko and the crushed chips. Dip/press the chicken into the panko mixture until well coated. Fry the chicken in 1-2 tbs. oil over medium-high heat, about 2-3 minutes on each side.
  2. When the outside is nice and golden brown, transfer to the oven and bake for 15-25 minutes at 400 degrees (depending on the size and temperature of your chicken breasts).
  3. Add the cheese; return to the oven for a few minutes until melted.
  4. Spoon salsa verde on the plate; place chicken on the salsa verde, and sprinkle cilantro sauce and pico de gallo over the top! Que bueno!

Ingredients

  • 4 frozen bread loaves (I used Rhoades brand)
  • 1 lb. ground sausage
  • 1 cup mozzarella cheese, shredded
  • 1 cup tomato sauce (pizza, pasta, marinara, whatever)

Instructions

  1. Thaw the dough. I thawed mine for about 8 hours in the refrigerator. Then I took them out and let them rise again for about an hour until they were puffed up.
  2. Brown the sausage. When cooled slightly, mix with sauce and mozzarella.
  3. Cut each loaf in half. Roll it out and place about ¼-1/3 cup sausage mixture in the middle of each calzone. Fold the tops over and pinch shut with a fork.
  4. Bake for about 12 minutes at 400 degrees, or wrap and freeze!
Notes
One serving is half of a calzone, and I would definitely recommend making the whole batch and then freezing what you don’t eat. I am guessing that if you freeze them, you could just let them thaw for a few minutes when you are ready to bake, and then bake at 400 degrees for closer to 20 minutes.

Garlic Parmesan Turkey Burgers
  • ½ lb. ground turkey
  • 2 cloves garlic, minced
  • ⅓ cup seasoned bread crumbs
  • 3 tbs. fresh parsley
  • salt and pepper
  • beaten egg
  • 3 tbs. freshly grated parmesan cheese
Creamed Spinach Sauce
  • 2 Tbs unsalted butter
  • ¼ cup minced onion
  • 2 Tbs all-purpose flour
  • ½ cup fat free half-and-half, plus more as needed
  • ½ cup low-sodium chicken broth
  • kosher salt and black pepper
  • pinch cayenne
  • pinch nutmeg
  • 4 cups chopped fresh spinach
  • 1 Tbs grated Parmesan
  • squeeze of fresh lemon juice

  1. Mix all ingredients together.
  2. Form 4 patties and place on a grill or griddle on medium-high heat.
  3. Grill a few minutes on each side and turn. Cook until no longer pink in the middle.
  4. I served this on a 9 grain ciabatta roll. Voila!
Creamed Spinach Sauce
  1. Melt the butter in a medium saucepan over medium-low heat. Add the onion and cook until translucent, 3-4 minutes. Stir the flour into the onions and cook 1 minute.
  2. Whisk in the half-and-half, broth, salt, cayenne, and nutmeg. Bring sauce to a simmer, then reduce heat and simmer for 2 minutes, until it begins to thicken.
  3. Add the spinach, stirring until wilted. Mix in the Parmesan and lemon juice, and add more half-and-half if the sauce has thickened too much. Season to taste with salt and pepper.

Ingredients

  • ½ lb. chicken breast
  • 1 tbs. each minced garlic and jalapeno and olive oil
  • 1 teaspoon chili powder
  • 1 mango
  • 1 cup celery, chopped
  • 3 tablespoons light olive oil mayonnaise
  • 2 tablespoons plain yogurt
  • juice and zest of ½ lime
  • ½ cup fresh chopped cilantro
  • optional add-ins: 2 tbs. minced red onion, 1 chopped roasted red pepper, 1 cup black beans, 1 teaspoon sugar

Instructions

  1. Saute garlic and jalapeno in oil over medium-high heat until soft, about 1 minute. Sprinkle chicken breasts with salt and pepper and chili powder. Cook chicken in skillet until cooked through and brown on the outside, about 4 minutes per side. After chicken has cooled, dice or shred into small pieces.
  2. Toss chopped celery, peeled and chopped mango, and cooled chicken in a large bowl. Stir in mayonnaise and yogurt. Add lime juice and zest. Season with salt and pepper.
  3. Stir in any additional add-ins (see suggestions above – I used all of them)! Store for up to a few days in the refrigerator. Add the fresh cilantro just before serving.
